Sure...why not if you can think them up then they do exist. Here are a few of my ideas:

-Little breakfast burritos: Take some crumbled breakfast sausage, fried it up with diced onions & peppers, then add in a few beaten eggs. Cook until done. Add in 2 T. of grated cheddar cheese. Heat up some smaller sized tortillas (flour or corn) and make some little breakfast burritos.

-French toast sticks: Take some day old sourdough or french bread. Cut up into bread sticks and make french toast out of them. When you are finished, you can dust them with cinnamon powdered sugar and have a small bowl of maple syrup for dipping.

-Mini quiche tarts: You will need premade (mini) pastry tart shells or you can make them. To make them: Take a few slices from premade canned (flaky) biscuits & put them in muffin tins. Bake them until just done. Add in your quiche mixture and bake until done. Quiche mixture: Eggs, swiss cheese, thinly slice ham, a little heavy cream, salt & pepper.

-Deluxe "donut holes": Pick up a dozen little donut holes from your local donut shop. Handle them carefully, and make a little slit or pocket in each one. From there you can stuff them with items such as:
-Fresh fruit...strawberry slices, fresh blueberries, slices of banana
-A variety of jams/jellies...a little espresso spoon works best but a butter knife will work too.
-Spreads: Apple butter or a real treat "Nutella"...the chocolate hazelnut spread
Once you are done stuffing them, place them on a tray and dust them lightly with confectioners sugar.

Lox, cream cheese, and bagels.

Get the small (mini) bagels, split them and toast them on a cookie sheet in your oven broiler.

Top with cream cheese, lox, red onion, and some capers.

Garnish with some chopped chives

enjoy
