So half way between the process of holiday cookies, I realize I'm out of vanilla. This brings the process to a screeching halt, and needless to say, I'm p-oed. I've searched the web for subsititution ideas, but have found nothing except 'rum'. Would coconut rum work? It's all the liquer we have at the moment, and the car's with my mother. How much should I use?

Relax!!! Your dilemma might turn out to be a new recipe!!! Since there is such a small amount of vanilla called for in cookie recipes, I sub out liquor all the time, my favorite to do it with is Fangelico (Italian Hazelnut Liqueur) or Chambord (French Black raspberry Liqueur)........your cookies will be fine.....the coconut rum will be a great flavor to the cookies....if you have some coconut in your fridge, you might toast some in the oven and the sprinkle it atop the baked cookies.....Enjoy!!!

I think you could use any kind of flavoring and coconut extract would taste great! I don't know what you mean by coconut rum. I don't cook with anything alcoholic, except the food flavorings that have a small amount of alcohol.
Just try flavoring maybe half the dough with coconut, and see how it tastes after baking a couple of cookies. If you don't like the taste, stick the bowl into the fridge until you have a car to get some at the store.
I started making a chocolate, carmel, pecan candy and discovered I don't have the chocolate candy bark to mix with the chocolate chips. I've put it away because at this late date, I can't find any chocolate bark! I'm not going to fret and spoil my holiday, because I forgot an ingredient. I'll just bring it out for New Year's Day!!
Good luck and have a safe and happy Christmas!!

The vanilla gives the cookie flavor so the coconut rum will work. They will taste different. Sounds like something I might like though!

Vanilla is really for sweetening the cookie. You could also use applesauce...i know it sounds weird but it works!!

Just substitute it for the vanilla. Probably equal amounts because both have alcohol in them. Good luck.

Try it! It will be an interesting flavor. Use less than the amount required because you do not want the flavor to be overpowering.

Mmm that would be yummy! You can use any extract or liquor in place of vanilla. I would use the same amount as the recipe calls for.
