Sweet Potato Fluff

3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)
½ cup sugar
¼ cup melted butter
1 (5 oz.) can evaporated milk
¼ tsp. kosher salt
1 tsp. vanilla
Dash of each: cinnamon, nutmeg, dry orange peel

Topping:
½ cup brown sugar
½ cup chopped pecans
½ cup flour
2 Tbsp. butter

Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.

Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice. Stir in remaining ingredients and pour into a greased casserole dish.

Sprinkle topping on potatoes and bake for 40 minutes.

I do this but do not measure anything. I boil the sweet potatoes (peeled and cubed first), then mash with some milk and butter. Then I add a little brown sugar, vanilla and cinnamon till I like the taste. You can then either top with pecans or marshmallows and put it under the broiler to melt the marshmallows.

I love mashed sweet potatoes!!! you make them just like regular mashed potatoes. peel and cube and boil them in water til fork tender. mash with butter and cream. I like to add some cinnamon and a little brown sugar to mine. or just plain with salt and black pepper is good too....

new at the store..........Betty Crocker has this in the box now and they are terrific!
