Rinse inside and out with cold running water. Pat dry with paper towels and rub with olive oil.
Place in a roasting pan and stuff with a sliced lemon and a sliced onion. Sprinkle inside and out generously with salt and pepper, and whatever herbs you like (rosemarry is good for poultry, so is sage).
Bake (uncovered) at 425* for 1/2 hr, then reduce the temp of the oven to 350* and roast until the internal temp reaches 180*. Use a meat thermometer to test the temp by placing it deeply into the thigh, not touching the bone. It will take a couple hours to reach the right temp.
If you like your turkey golden brown, be sure to baste with it's own juices about once every half hour after enough juices have built up in the pan.
Turkey is easy to cook, it just seems scary. I'm sure it will be delicious!

Get a big/deep pan - there will be a lot of juice.
Thaw the turkey completely - in the fridge preferably - otherwise in cold water.
Remove all the stuff from both ends of the inside of the turkey (liver, heart, gizzard, neck)
Wash the turkey inside and out.
Put it in the pan and rub a little seasoning on it (salt, pepper, whatever you like)
Pre-heat the oven. Following the cooking directions for your size of turkey. It will take several hours to cook.
Occassionally pour some of the juices over the cooking turkey.

Preheat the oven to 200centigrade then pop your turkey in the middle of the oven for 4 - 6 hours depending on its size.

ROASTED BRINED TURKEY
1 (14 to 16 pound) young turkey, fresh or thawed
For the brine:
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1/2 tablespoon allspice berries
1/2 tablespoon candied ginger
1 gallon iced water
For the aromatics:
1 red apple, sliced
1/2 onion, sliced
1 cinnamon stick
1 cup water
4 sprigs rosemary
6 leaves sage
Canola oil
Combine all brine ingredients, except ice water, in a stockpot, and bring to a boil. Stir to dissolve solids, then remove from heat, cool to room temperature, and refrigerate until thoroughly chilled.
Early on the day of cooking, (or late the night before) combine the brine and ice water in a clean 5-gallon bucket. Place thawed turkey breast side down in brine, cover, and refrigerate or set in cool area (like a basement) for 6 hours. Turn turkey over once, half way through brining.
A few minutes before roasting, heat oven to 500 degrees. Combine the apple, onion, cinnamon stick, and cup of water in a microwave safe dish and microwave on high for 5 minutes.
Remove bird from brine and rinse inside and out with cold water. Discard brine.
Place bird on roasting rack inside wide, low pan and pat dry with paper towels. Add steeped aromatics to cavity along with rosemary and sage. Tuck back wings and coat whole bird liberally with canola (or other neutral) oil.
Roast on lowest level of the oven at 500 degrees F. for 30 minutes. Remove from oven and cover breast with double layer of aluminum foil, insert probe thermometer into thickest part of the breast and return to oven, reducing temperature to 350 degrees F. Set thermometer alarm (if available) to 161 degrees. A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting. Let turkey rest, loosely covered for 15 minutes before carving.

I like to put mine in the oven bake bags ...just wash Turkey really good with water,dry with papertowl, then stuff with stuffing or just for flavor add a sliced apple and onion and stuff. salt and pepper inside and out ,butter it up, place in bag and follow cooking instruction on how long.................hassle free no basting nothing.............enjoy

They have the Butterball turkey that's already prepared!You just need to put it in the oven.
They have it at your local grocery store I think.
