When I say produce I mean: Onions, Bell peppers, Broccoli, mushrooms, and squash. If It is ok, how long can I freeze them for? Will they taste the same?

I've chopped onions and bell peppers fresh, spread them on a cookie sheet (single layer) and put them in the freezer. When frozen, put in Zip-loc bag. Use as needed, but in cooked dishes--the texture wouldn't be great in a salad or something.

I think broccoli needs to be blanched. don't know about mushrooms. I wouldn't freeze squash unless I was going to puree it later--too much moisture, it will be mush.

I have frozen fresh produce and has work well. Onions and peppers ,chopped and frozen. Broccoli needs to be blanched first. Place in boiling water for no more than 30 seconds. First time I did broccoli I blanched it for a minute and when thawed it turned to mush. Don't know about mushrooms, don't eat them. Squash would probably go the same as tomatoes and when thawed most of the water would come out. I just finished making tomato sauce using frozen tomatoes. While frozen I ran warm water over the tomato, the skin came away easy and as they thawed the water came out of them and it saved heaps in boiling down to make a thick sauce.
If you are freezing fresh produce, the fresher the better. With in a couple of hours of harvesting is the best.

some things need to be blanched first you might check out the BALL web sight for sure.
