I am serving a deli tray with meats and cheese and rolls tonight along side a bowl of broccoli and cheddar soup. Since I am assuming the soup will fill people up, they will only have one or 2 sandwiches. How many pounds should I have? I have 3 right now but I am going out soon and wanted to know if I needed more? Thanks!

About 4oz per person of meat and perhaps 2oz of cheese.
So you would need 2# of meat and 1# of Cheese.
You will also need to make 3/4 gallon of soup for 8 12oz portions.

Just thought I would add that in as well.

3 lbs of deli meat is plenty for 8 people. If they take 4 oz. each (a LOT), you have enough to feed 12 people. You may want to get a pound of cheeses, though.
