Yes you can however you still do 8 years all together. 2 years active and the rest of the time in the Inactive Ready Reserves (IRR). Basically it means they can call you up.
You will not be offered that great of jobs since they don't want to pay for your training and you get out anyways.
I'm not sure on the job selection but I would say cook, supply and maybe some administrative jobs. You would have to check with a recruiter.

I believe that your first enlistment last atleast 3 years then you can re-enlist for an extra 4 years or go reserves, national gaurd etc.

I think it's only for Infantry. That being said, when I enlisted for Infantry, they gave me between 3-6 years to choose from. As previously mentioned it is 8 years total; you would be counted as Reserve for 6 years.

yes you can enlist for 2 years but whats the point? you wont get any good deals....if youre gonna join, go the whole hog. theyve got you for 8 years anyways, once you sign. best bet is to talk to a recruiter

I believe the Army has a two year program. However, only a recruiter can tell you which programs you qualify for and which jobs are available for you.
