I am making dinner for my Dad tonight - we are having Christmas tonight before we both go out of town. I am making roasted pork loin with a mustard honey glaze, and am serving a side dish of roasted vegetables (butternut squash, red and yellow bell peppers, potatoes, carrots, onion, etc.)

What is another side dish that would compliment this?

I love baked sweet potatoes with cinnamon butter and a little brown sugar. They're super easy and delicious to boot.

Also, wild rice is safe.

If you want to go with another green, try laying asparagus out on a cookie sheet, drizzling with olive oil and sprinkled with a little salt and pepper or season-all. Bake until desired tenderness. Mmmm.

Sounds great and you have already covered the basics. I would be servicing a simple crisp green salad - lettuce of choice, mesclun mix might be nice or romaine, cucumber, red onion, bacon bits on top with a little virgin olive oil & lemon squeezed on top & lightly tossed. You might want to add a tomato but I wouldn't.

Will depend on on the context really. Which is better as a snack - fruits to me. It's tastier and gives you that tad of sweetness. Which can be better as a snack if you are trying hard to slice back on sugar and lose weight vegetables
