Sweet Potato Casserole
2 1/2 pounds sweet potatoes (about 3 large), scrubbed
2 large eggs, lightly beaten with a fork
3 tablespoons unsalted butter, melted plus more for the preparing the pan
2 tablespoons packed dark brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch of freshly grated nutmeg
Freshly ground black pepper
1/4 cup coarsely chopped pecans
Preheat the oven to 400 degrees F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool.
Turn the oven down to 350 degrees F. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth.
Butter an 8 by 8-inch casserole. Pour the sweet potato mixture into the pan and sprinkle the top with the pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.

Really simple. If you're not going to use canned. Boil up some sweet potatoes, about 10 if your doing two, until they're soft. Scrape them out of their skins and put unto a bowl to mash them up. I like to add ground cinnamon, ground nutmeg, ground gloves, a little brown sugar, a little heavy cream and zest from an orange. Mix it all together and throw it in a casserole dish, dot the top with pads of butter, then top with marshmellows. If you want the yummy pecan topping, cut together about 4 tablespoons of butter and 1/4 cup of firmly backed brown sugar (cutting is using two knives to incorporate the ingredients). Then once its combined add about 1 cup of roughly chopped pecans or walnuts...or both! If you're using a large pan you may want to double the topping recipe. Bake at 375 for about 25 minutes. The potatoes are already cooked so you just need to let it get hot.

Butter Pecan Sweet Potatoes
8 med. sweet potatoes (5 lbs.)
2 Tbsp. olive oil
Kosher salt
2 Tbsp. cold butter, cut into small pieces
2 Tbsp. light brown sugar
1/3 cup pecans
1/8 tsp. cayenne pepper
Preheat oven to 400ºF. Peel potatoes. Halve lengthwise, slice crosswise into ½” thick slices. On a baking sheet, toss potatoes w/ olive oil and salt. Transfer half the potatoes to a 2nd baking sheet. Bake until tender about 25-35 min., tossing occasionally. Toss potatoes with butter, brown sugar, pecans, and cayenne pepper, dividing evenly between both baking sheets. Bake again until sugar is caramelized and hard, about 10 minutes. Gently toss and serve. Serves 8.

Sweet Potato Fluff
3 cups mashed cooked sweet potatoes (8-10 fresh or two large cans)
½ cup sugar
¼ cup melted butter
1 (5 oz.) can evaporated milk
¼ tsp. kosher salt
1 tsp. vanilla
Dash of each: cinnamon, nutmeg, dry orange peel
Topping:
½ cup brown sugar
½ cup chopped pecans
½ cup flour
2 Tbsp. butter
Preheat oven to 350ºF. Combine topping ingredients w/ a fork until crumbly; set aside.
Beat potatoes well with a mixer until fluffy. Stop and remove any strings from the beater at least twice. Stir in remaining ingredients and pour into a greased casserole dish.
Sprinkle topping on potatoes and bake for 40 minutes.
Serves 8.

Savory Sweet Potatoes
3 cups cooked sweet potato (8-10 fresh or 2 [29-oz] cans; not BRUCE brand-ick!)
½ stick real butter
3 strips bacon
1 small onion, chopped
1½ cups grated sharp cheddar cheese, divided
Salt and black pepper to taste
Preheat oven to 350ºF. In 9"x13" casserole dish, coarsely mash potatoes and butter with fork. (works best when potatoes are hot.) Fry bacon and drain well, then chop it. In bacon drippings, cook onion until clear. Add bacon pieces, onion, 1 cup cheese, salt, and pepper to potatoes, stirring with fork to combine all. Spread out evenly in pan.
Top with ½ cup cheddar cheese. Bake for 20 minutes.

2 c canned or boiled sweet potatoes,1/3c butter,1c sugar,1/2 tsp salt,2tsp flour,2 eggs,1 tsp vanilla,topping: 2 c pecans,chopped,1/3 c flour 1/3c butter,1c brown sugar
grease 12x8 baking dish. mash sweet potatoes ,with mixer .melt butter and add to potatoes. add sugar and salt then beat in eggs ,vanilla and 2 tsp flour . mix will be lumpy. Pour in mixture . mix pecans flour butter and brown sugar and spread over potatoes. bake at 350 for 35 min . add marshmallows or raisins to potatoe mixture if you like . merry christmas .

Here's my mom's sweet potato casserole. The photo is one she made for Thanksgiving.
It's the absolute best one I've ever tried. Folks go wild for it when she takes it to pot luck dinners.
This is the kind with the sugar and nuts on top.

if you know the ingredients just mix them in add same rum to it, bake it 375for 1 1/2 h then add marshmallows
you can slice the sweet potatoes up mix with slices of orange and Cinnamon spice, rum and you good
