How long should I give it to defrost in the refrigerator? I want to cook it on Christmas day.

Since it's a pot roast and will be simmered, I wouldn't worry even if the center was frozen. I assume you plan on searing the outside and then adding liquid and simmering for a few hours. In that case. Take it out a good day before so that the exterior is not too hard to get a good sear.

Better start defrosting NOW in the fridge. Be sure to set it in a bowl or on a platter in case it leaks as it thaws.

Put it in the fridge on Monday early or Sunday night and you'll be fine. It isn't that big so a day should do it.

Overnight should do it. To be safe, I'd stick it in the fridge a whole day before.

Sounds yummy!
