Hi,
So I had to make the carrot cake and let it stay over night because I won't have enough time to make it the day of the event.

I'm a bit paranoid it will be dry because I think I might have left it in too long to begin with. Is there anything I can do to make it moist? This will sound silly but can I like inject pineapple juice inside it somehow or something??? I wish I could try a slice before I serve it, lol. This is my first time making homemade carrot cake.

Also, should I let the cake sit out overnight at room temp. or put it in the fridge? When should I frost it...now or right before serving it???

I made cream cheese frosting homemade as well and so I think that maybe I can't just let cream cheese sit out at room temp...

Ugh...I'm such a newbie to baking! ANY help is greatly appreciated!!!

Aw, you poor thing. Quit worrying. Carrot cake is like Christmas cake, gets better and moister with age. Put your icing on, put the cake in a large plastic container. If you don't have one then stick toothpicks all over it and cover with cling wrap. It actually keeps for days in the fridge. No injections needed! Merry Christmas.

The carrot cake should be moist even though you left it out over night. If you covered it, it will be even moister.

You should frost it ASAP now that it is cooled, that will also hold in moisture. And since it is a cream cheese frosting, refrigeration is necessary to prevent spoilage (unseen bacteria growth in milk product).

When you put the cake in the refrigerator before or after frosting, cover it too so it doesn't pick up other flavors of items in the fridge. If you don't have something to put the cake in to protect it in the fridge, put toothpicks on the top and sides if they are exposed. Space them close enough together so you can drape and seal the cake with saran wrap. The toothpicks will hold the wrap away from the frosting so it doesn't get ruined.

A carrot cake is generally so moist that just sitting out overnight is nothing to worry about. I think you will be fine here. Just get it frosted and in the fridge until you are ready to leave for your event where you will be taking your wonderful treat.

You are just fine with the cake

Normally I would cover it with plastic wrap when left overnight but I have forgotten in the past. Carrot cake is very moist and leaving an uncut cake out for 8 hours is not going to dry it out.

It's ready to ice right now so go ahead and ice and enjoy your cake.

Ok, that was a lot to read.....

If you left it out at room temp, it is fine. No need to refrigerate.

If you did nto wrap it up in an airtight way (foil, plastic, cake holder), it will be stale.

You can try cuttingoff te exposed areas, THEN icing w/ your frosting. If you inject some kidn of juice, it will turn into a water-logged, soggy mess. Don't do it.

I'd refrigerate the cake overnight, and wait until the next day to make the frosting.

The recipe for carrot cake I make says to refrigerate the cake for 1 hour or up to 1 day.

I like it cold. But i also like a crusty top. But you might try sprinkling a little brandy over it! Maybe put some in a spray bottle and mist the top with the brandy or another liquid. Also try wrapping it in foil the night before. That will keep the moisture in it. Good luck!!!
