Now, I know there are veg friendly ramen noodles - here, the store brand beef and chicken flavours (Master Choice brand) are veg; Pot Noodle chicken are in the UK; and Mr. Noodles mushroom and veg flavours are vegetarian.
But if you can't get that, here's what I've (or my friends) have done with ramen.
- Add a little ginger, a little soy sauce, and some chopped green onions to the water - if you have it, add sesame oil.
- Add soy sauce and a little bit of hot sauce or chili paste.
- Add any veg broth - mushroom, vegetable, or the mock chicken/beef you get at the grocery store.
- A dash of oyster sauce and some green veggies - spinach, broccoli, that sort of thing.
- Cook them in tomato juice instead, with a bit of salsa or chili powder to taste.
I have a Korean friend who swears by boiling the noodles with an egg and then mushing the hardboiled egg with the noodles. I think it's vile, but if you love eggs, you could give it a try.

There are flavors, but it depends on what you want.
A lot of the natural food sections have selections you might want. Likewise, some of the "asian" sections".
Beyond that, you're mainly adding aromatics and spices. So it depends on what you like. Pepper? Garlic? Other stuff? Just lay off the sodium (salt) as ramen is usually pretty loaded already.
And I bet if you check the ingredients level - not for shrimp, chicken or beef, but just simply vegetable ramen or lemongrass chili or something, you'll find one that works. Some of them are in the imported aisle.

You can make your own....
If you go to any Asian market, you can buy a can of vegetable stock for about 2 dollars a can. One can should give you two serving full. You'll need to add some water as they are too strong for the purpose intended. Into it, you add some vinegar (regular kind will do) and some soy sauce. Bring it to boil. Into it, you can (optional) add fried shallot flakes, also available in Asian market.
You don't need a lot of vinegar and soy sauce. Anywhere from one tea spoon full to one table spoon full, depending on your preference. Be sure to buy a Japanese soy sauce, not Chinese kind. Believe it or not, they are not the same.
If you want to add pepper, use white pepper, not regular black pepper. You could also add hot pepper oil or sesame oil for flavor.
These are far more authentic than what you get in the flavor pouch.

Top Ramen Oriental flavor Ramen Noodles are vegan.
There also used to be, um, I think it was Ty Ling, original flavor. I haven't seen them in a while, though.
You could add a veggie bouillon cube, garlic powder, onion powder, and crushed red pepper.

I put in 1/2 cube of veggie bouillon and some thin-sliced green onion.
Soy sauce is good too. Some brands have fish, some don't.
I also like Korean BBQ sauce. I use a brand called Neul Charm. The sauce made for chicken doesn't have any meat in it. It gives a good spicy/salty/garlicky flavor.
Sometimes I just use one, sometimes I mix them all.

try to boil it in vegetable broth, it really tastes great!!!
lol better than the packet that comes with the noodles.

Don't eat that sodium filled and overly processed junkk in the first place. boil whole wheat pasta and add veggies and whatever sauce you've like to it instead. It's just as easy to make as it is to make one of those packages, only it's healthier and tastes better :) bon'appetite! xoxoxoâ¥

you can use spaghetti sauce, you can find some kind of marinade such as terriaki or sweet and sour sauce alot of them dont have any meat flavoring included. Just walk down the sauce isle at your store and check them out, then also look in the international isles for more variety .

There are vegan brands of top ramen, and your local natural foods store should have them. Sadly, I do not recall the brand offhand.
