Pimento Cheese and Chicken Salad are always favorites.
My fave finger sammich is a cucumber sandwich. Google a recipe for Cucumber spread (it's made from cream cheese with some shredded cukes and something else, I'm not sure). Then spread it on the sandwich with a thin slice of cucumber. It's really good.
Cutting off the crusts just makes it more decorative, but not really necessary. Alternatively, they make these decorative cutters with scalloped edges to make pretty sandwiches.
Or you could use Christmas shaped cookie cutters! (But you'd probably end up with a lot of waste that way).

RE:
How do I make finger sandwiches? (for a christmas party)?
Something good not wierd. lol. Do I just cut the crusts off and then cut the sandwich up in little squares? Sounds like it would work to me, but what do I put on it?

I would subject making any of your favorite sandwiches but instead of cutting in little squares you could always use Christmas cookie cutters for a more festive look. This would be good and is very easy Pumpernickel bread Spread cream cheese over add a few thinly sliced cucumbers this time of the year the English ones are best sprinkle with dill.

I just made them for my friend's party. Yes, you cut the crusts off first then make a spread with mayo. and mustard and fresh dill weed. Put the spread on the bread with cheese turkey or ham whatever you want. Another idea is onion & chive cream cheese and water chestnuts chopped up with the slice of cucumber in it I know it sounds kinda weird but it's very very tasty. Once the sandwich is made you cut them in halves and then halves again. Have fun!!

Chicken or ham salad works. Ham or any other lunch-type meat and pickle relish. Almost anything you make a regular sandwich out of is appropriate, and then yes, cut off the crusts and cut them into little squares. The small size is what makes them "finger sandwiches."

you can also buy cocktail bread,
an easy one is cucumber, 1/2 cup mayo 1/4 cup sour cream 1 tbsp fresh dill chopped finely, mix half the dill with mayo, 2-3 cucumbers peeled &sliced thin, spread the mayo mix on the bread top with cucomber sprinkle remaining dill over the completed sandwhiches.
Bruscheta, using the same coctail bread or a french baguet (have the bakery slice it for you). 1 small container pesto 8 oz shredded itailian cheese, 2 cloves of garlic.
take the cloves of garlic cut in half rub the cut side over the bread broil for a 1-2 minutes until golden, using a kitchen brush or a spoon spread the pesto over the toasted bread top w/ pesto sprinkle a thin layer of cheese broil for another 2-3 minutes. (if your pesto is thick thin it w/ olive oil or any light vegatable oil). you can also add sundried tomatoes or any thin sliced deli meats

Go to allrecipes.com.
I use storebought Mrs. STratton's premium chicken salad, pimento cheese, or home made tuna salad. You can use anything. (except Peanut butter and jelly lol ) I cut the crusts off and make triangles. Some people use small cookie cutters and get all decorative. It just depends on your taste!! I love this website for recipes.

i think pepperidge farm sells loaves of bread that are "super thin" and they come in white and wheat and maybe rye. they are smaller than regular bread slices. put chicken salad, pimento cheese, salami, spinach, and cream cheese, ham, swiss, and honey mustard, etc. on the bread. there are so many different kinds of fillings. then cut the sandwich in an 'X' and arrange them by flavor on a platter. try the food netwok's website for filling ideas.
