Well, fruits, vegetables, grains, nuts, beans are original.
You can make a pilaf with a grain, some nuts, and dried fruit.
You can marinate veggies and grill them and serve with rice.
If you're not averse to tofu or tempeh, you can make stir-frys with them.
Pasta with marinara sauce can be vegan.
There are all sorts of ethnic dishes that are vegan--such as hummus, baba ghanoush, tabbouli, falafel, etc.
None of these requires a mock meat.

Yes, the way i see it there is food, a small fraction of which is from animals. Ignore that bit, and you've got original vegan food.
When i ate meat, it was from the following species: pheasant, rabbit, trout, sheep, cow, pig, cod, and that was it. I now eat food from a huge number of different species: mushrooms, chanterelles, puffballs, shaggy ink cap, kelp, dulse, wakame, hijiki, kombu, pine nuts, and i haven't even mentioned flowering plants, i.e. the majority of my food, yet.
There is a Rastafarian vegan tradition as well as Vegan Society style veganism called I-tal, and the followers of Pythagoras were also essentially vegan, so there are other styles of food around. Strangely, Jain food is not among them.
