I can find several references to it, but for the most part it's saying "Don't have sex. If you HAVE to, do it inside a marriage, but it's best not to."
(Rom. 1:27, 1 Cor. 7: 5, 29)

And other references (Mark 12:25) to there being no sex in Heaven (is the ideal life the chaste one then?).

No where can I find a passage to support a statement that contemporary Christians could use to say what I've often heard that "Sex (between married man and woman) is meant to be enjoyed."

At best, it is seemed to be distasteful in the extreme, but if one cannot control ones baser desires, if you absolutely HAVE to, do so in marriage (1 Cor.).

That's probably the most depressing thing I've ever heard. What am I missing? Is there some passage that extols the virtues of sex? The best I've found is that Heb. 13:4, which says not to commit adultery, sort of saying the above, that marital sex would not be Judged. Is that the best they can do?

How does nature teach us? With very few exceptions, sex is used for procreation. There are only a handful of species (mostly primate) that have sex for reasons other than to pass on their genes. This seems to be the OPPOSITE of what you're saying...

(Cor. 7 : 5 was mentioned to put 7 : 29 in context)

Also "Not hold yourself from your spouse" seems to be saying that (again) sex is distasteful, but to avoid having your loved one's sin, do so. Again, it seems like sex is only tacitly endorsed.

The closet I come to in the NT is in the writings of Paul in 1Corinthians 7:2-5.

"But since there is so much immorality, each man should have his own wife, and each woman her own husband. The husband should fulfill his marital duty to his wife, and likewise the wife to her husband. The wife's body does not belong to her alone but also to her husband. In the same way, the husband's body does not belong to him alone but also to his wife. Do not deprive each other except by mutual consent and for a time, so that you may devote yourselves to prayer. Then come together again so that Satan will not tempt you because of your lack of self-control."

However ... If you wish a wonderful picture of the positives about sex, read carefully the Bible book sometimes called the Song of Songs or the Song of Solomon. The love story there is extremely sexual and very graphic! Sola scriptura means that Scripture alone is authoritative for the faith and practice of the Christian and of course includes the Old testament as well.

All of the above are being quoted out of context. No one in the new testament addressed the stoics, which is where such a comment would be. Most of scripture is addressing errors. 1 Tim 6:17 certainly does not mention sex specifically, but seems to point to the appropriate attitude. 1 Cor 7:5 actually is addressing your exact point, though most people don't realize it. Do not cut the "Old Testament" off of the scriptures. They were written by YHVH for us, and they (Prov 5:18) address this question more directly.

One scripture says "...does not even nature teach you?" Certainly nature teaches us that it is or can be enjoyable. Also Paul speaks about not with holding yourself from your spouse lest they be tempted. Does not say it, but implies without it you face temptation to evil.

Cor 7:5 Stop depriving one another, except by agreement for a time, so that you may devote yourselves to prayer, and come together again so that Satan will not tempt you because of your lack of self-control.

As far as I know, you're not going to find anything in either testament to support that sex should be enjoyed. The very idea of sex having to happen, and then only within wedlock, was probably merely a concession by the authours to the concept the race would die out without it.
