I love sour cream too.....i am hungarian, and it's essential to hungarian cooking...lol....
I put tons of sour cream into mashed potatoes....tastes great and everyone who ever tried it loved it.
Also, if there is nothing else in the fridge, I put sour cream on spaghetti noodles. Add some mild cheddar and salt (!!) and its grrreat!!!
We also put sour cream on goulash...and chili
I guess my family puts sour cream on just about anything...lol....there always has to be some in the fridge!!!

With latkes (sort of home-made hash browns) and apple sauce - yum...
Or get a tin of apricot halves, drain, put round side up into a lasagne dish (ceramic or glass), empty a carton of sour cream over the top, sprinkle a layer of brown sugar on top of that, and caramelise under the grill - instant creme brulee! Smoosh up with avocado, lemon juice and garlic salt for a quick heart-attack snack or spread for rye bread.
Definitely on goulash, and also on anything highly spiced to cool it down a little.
I love sour cream too :)

I also love sour cream. I'll add some freeze-dried chives (from the spice aisle) and a dash of salt, stir it up, and use it as a potato chip dip. You can also go with the old stand-by: baked potato with butter and lots of sour cream - de-lish!

I think sour cream tastes good with just about anything.
Especially spicy foods: chili, salsa, beans and rice.
It is also good to be added as a cream in dips and such.

Baked potatos of course, Also on top of chili. With pastas and egg noodles. Mix with a llittle wostershire sauce and use as dip with fritos. Good with salsa on Pierogis (you can get them in the freezer section). With fruit ( there is a good fruit salad recipe that calls for it, with orange and pinapple adn marshmellows and coconut) I can't remember, google it?_
also can use it on pound cake like whip cream, and chocolate sauce.
