This feature is not available in 2.10 update.

Only game i have seen that can utilize custom soundtrack is High Velocity Bowling (at this point). Great game and only 10 bucks. Plus it shows that developers have the option of putting this in games if they choose. But there is no Sony supported in game xmb yet.

In game XMB (cross media bar) and or in game custom soundtracks haven't been added to the PS3's features yet, so you can't. Though Sony has announced it will be released soon.
