are you talking classic tomato bruschetta. that's a toughie because tomatoes are extremely hard to pair with wine due to the high acid levels of the tomatoes.I would probably do a white, maybe a chenin blanc, pinot grigio or a sauvignon blanc. if you want red, stick with italian reds like sangiovese, or chianti.

Any type of wine is good to serve. A good rule of thumb is not to serve wine that will overpower the food.
Cabernet Sauvignon might be a little too strong. Maybe a Merlot or a Syrah or a Pinot Noir. A good white wine would be a Pinot Gris.

With appetizers, typically, the best wine to serve is a white wine (chardonnay is my fav). depending on your guests, something light and fruity, not too dry is best.
