I make a nice bruschetta for starters and then have lasagna for dinner with gluten free pasta sheets so yummy ...
Bruschetta .
Ciabatta bread cut in to thin slices ,brush with garlic butter melted .
6 Roma tomatoes cut in to cubes little squares .
Fresh Basil cut up fine .
Garlic cloves 2 cut in to fine pieces or grated
1 spanish red onion cut in to fine pieces or grated
1 tablespoon of extra virgin olive oil and 2 table spoons
of balsamic vinegar
Mix entire engredients together and taste test for extra bite add a little more balsamic vinegar ,refrigerate mixture for 30 min ..
Put bread slices under griller to warm until golden and crispy then remove mixture from fridge and spoon on to bread .
Finish off by sprinkling parmesan on top of the mixture that is on the bread...

One dish meal is best if you have to clean up afterward.
One dish biryani:
Soak rice in warm water for 30 minues.
Spice chicken portions with curry, turmeric and cinnamon.
Herbs; Parsely, thyme, garlic, origanum.
Salt to taste
Saute chicken portions in a pot with a heavy base.
Add onion slices and potato if you like.
Place soaked rice on top of the meat and add water.
Place lid on firmlly and turn the heat to lowest setting.
Steam until the rice is cooked.
Tip; All the herbs and spices are optional.
Add whatever takes your fancy.
OR
Do a pasta thing:
Pasta thing:
Boil macaroni in water until almost done. +- 5 minutes.
Add frozen veg that you like.
Add slithers of bacon.
Complete cooking.
Drain water.
Serve hot with grated cheese or with a cheese sauce.

Pasta Lasagna:
(economic everyday dish)
INGREDIENTS
1/2 pound penne pasta
1/2 pound lean ground beef
1 (26 ounce) jar pasta sauce
1 (15 ounce) container ricotta cheese
8 ounces shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese
1 egg, beaten
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2 quart baking dish.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet over medium heat, cook beef until brown; drain. Stir in pasta sauce; remove from heat.
In a bowl, combine ricotta, 1 cup mozzarella, Parmesan and beaten egg. Stir until well combined.
In the prepared dish layer half the pasta, half the sauce and half the cheese mixture. Repeat. Top with remaining mozzarella.
Bake in preheated oven 34 to 40 minutes, until hot and bubbly.

hmm.. really depends what u have in fridge ... im having chilli and orange cous cous with 4 lamb fillets cooked just pink and a garlic and mint yoghurt on the side .. so yum ...
