I know for 'bien cuit', it's 'well done', right?

Bien cuit = Well done
A point = Medium rare
Saignant = Rare / Underdone
Bleu = Very rare

I like my steak medium rare to rare. I always ask for it to be red but warm in the middle. Most of the time it is either brought to me cold, or too well done. I send it back. Then I get what I want. Not sure why they think I'll keep whatever they serve. Why ask if they can't provide the request?

When cooking a steak you have several choices rare, medium rare, medium, medium well and well done.
The trick to getting it right is take your left thumb and right thumb and index finger, starting at the knuckle closest to your palm move upward, thus you have rare, medium rare, etc.
As for me bring me the cow i will eat what I want and ride the rest home.

Well done = charred and cooked all through (can be tough)
Medium = sealed on the outside, just slightly pink in the middle.
Medium rare = sealed, very pink on the inside.
Rare = lightly seared on the outside, blood red inside.

And sometimes people order "Blue", which is red on the outside, still very cold in the middle. Almost still mooing.

I prefer mine medium rare - and exactly that. Not rare, not medium, but medium rare (MR).

In NY (maybe used elsewhere too, but I don't know that) we have a term; "Black & Blue." It means heavily charred on the outside and virtually raw on the inside. It sounds like the equivalent of the term "blue" that others here have mentioned.

well i suppose it depends what country ur in but the universal english terms are .. blue , rare , medium rare , medium , medium well and well done ...
