Set it up like a salad bar (or like subway).
Start with bread: Have hoagies, white and wheat.
1) Meats: Turkey, ham, roast beef, pastrami, pepperoni, bacon
2) Cheese: Cheddar, swiss, provolone, havarti
3) Veggies: Lettuce, onion, tomato, green pepper, olives, pickles
4) Sauces: Mayonnaise, yellow mustard, dijon mustard.

How about buying a meat and cheese tray or two (ask the deli how much you would need) and supply the some different types of bread. Also a nice spread of condiments and let everyone make their own sandwiches. You could also put out some plates and some chips

Why not have a cold cut plate, a cheese plate, condiment trays with olives, tomatos, roasted peppers,The usual ham, salami, roast beef,turkeycold cuts. the cheese plate; American, swiss, provolone and mustard, ketchup. Don't forget the cole slaw and potato salad..

Just buy a bunch of rolls and cold cuts and different sorts of cheese and let your guests build their own sandwiches.

Chicken salad is always great--chop the ingredients finely to help prevent salad from falling out of sandwich.

Meditteranean - chargrilled veggies and antipasti with buffalo mozzarella slices on ciabatta (you can add salami or mortadella too here)
Aussie - Chicken shnitzle with avocado, lettuce and mayo
BLAT wraps - bacon, lettuce, avocado and tomato wraps.

Sliced Roast beef.

ham and cream cheese wraps, thinly sliced with a tooth pick through it (to hold it together)...Ham, meunster cheese, and honey mustard is good, too! My 3rd favorite is turkey, swiss cheese, bread & butter pickle, and mayo.
