some cameras make people with dark skin look too dark but i want a camera that really brings out your color. I also don't like it when it makes your skin look ashy like the flash it too bring or grainy.

All cameras will meter for the average scene of middle grey. It's pretty close to most caucasian skin tone, so for darker skin you will need to adjust the exposure to underexpose. How much to underexpose will depend on how dark the skin tone is. You will need a camera that has manual override, or that allows you to adjust the exposure to underexpose (-) or overexpose (+). Then just work with the exposure until you get it right.

To lessen the flash, shoot portraits from farther away, and zoom in to telephoto. Or put a tissue over the flash (careful not to cover the lens though). You can also use exposure compensation with flash photos. Again, experiment until you find the right setting.

Automatics average the whole picture. If you want lighter skin tone, get a darker background; Darker skin tones, lighter background. If you have a manual camera, meter for skin tone and open up one stop. If you have a flat white reflector, shoot into the sun with them facing away from it (no squint) and hold the reflector next to you and bounce it back at the subject. Get "Picasa" fron Google, it's free and works pretty good for quick tuning.
