Basically, boxing in a ring is a sport in which two combatants hit each other with only their fists in big, thick gloves.

"Fighting" in a ring can refer to just about anything, whether it's boxing or kickboxing (where kicks can be used in addition to punches), different martial arts like Muay Thai (where knees and elbows or other combinations of skills can be used)... all the way to Mixed Martial Arts, where wrestling is combined with striking.

There are also Vale Tudo ("anything goes") tournaments everywhere in the world, though they're often not officially recognized by any governing body, and more of a bloody spectacle than a real sport.

"Fighting in a ring" can mean just about anything.

Boxing is its own sport and completely different than "fighting". Boxing is fighting but fighting is more than boxing. In boxing, there are certain rules that are not observed in MMA style bouts such as: no kicking. No hitting below the belt (including legs). No grabbing or grappling and you wear boxing gloves. Most MMA bouts forbid the eyes and groin and don't allow biting.
