I want to melt the cheese to make a dipping sauce for my french fries. I put it in the microwave, and it got really thick. Once I took it out, it got really hard really fast, so it wasnt able to be dipped. Is there anyway I can melt it where it will stay runny?

I add whole milk and mix it really well until it's the consistency I like (Velveeta is hard to blend and get it right)and microwave only 10 seconds at a time(giving it another stir every time which will help with the blending of the milk) until it's the temperature that I want as well as runny consistency. I like Cheez Whiz better because it's easier.& faster. To melt the Cheez Whiz I put it into a pyrex measuring cup and microwave for 1 - 1/2 minutes on medium heat but I stir at the 1 minute mark & start the microwave for another 1/ 2 minute. Great for a veggie dip or with Nachos. Should work for french fries, as well.

Make yourself a "double boiler" by finding 2 pots similar in size. Fill the larger one with water until the bottom of the smaller one slightly rests in it. For a 5# block of Velveeta(sorry, I'm used to cooking in volume), use about a pint of heavy cream(or milk for less calories). Med-high heat until water simmers. Cover and stir occasionally. This method is sure-fire as long as the water doesn't evaporate or boil out. If you're not in a hurry, you can do it on low heat and just check on it once in awhile, or high heat if you're going to stand over it to stir and keep an eye on the water, P.S.- I know it's messy, but if you cut the Velveeta into chunks before melting, it will go a lot faster. ; }

I just made two ham, broccoli, onion and Velveeta cheese quiches. The cubes of cheese didn't melt, though I baked it for an hour and 15 minutes at 350 degrees. I think they changed the formula

Cut into cubes so it melts more evenly/quickly. Then dump in a crock pot, a double boiler, or watch it carefully in the mic. If you need to thin it out a bit, you can add a little milk, butter, or water, or something flavorful like broth, salsa liquid, or whatever.

Chunk it up so it melts more evenly. Add milk to thin. Melt on stove top, microwave or crock pot.

I always cube it first. The crock pot will melt then keep it warm. Thats your best bet if you have a crock pot. If not cube and put a little milk then the micro wave.
