I'm not sure if this has been done before but I thought of it the other day and turned out really good. I had some zucchini, eggs, bread crumbs, salt, pepper and onion. I shreaded the zucchini with a cheese slicer, diced the onion and mixed the two with the bread crumbs, egg and salt and pepper. I then made them into pancake like patties and fried them on a little oil and they turned out great. Not sure if this has been done before or not but they were so good I just had to share.

Your recipe sounds great. I make similar zucchini pancakes



1-1 1/2 lb. zucchini (1 large)
3 eggs
1/2 cups flour
1/4 cup bread crumbs
salt & pepper
mozzarella or any melting cheese
2 tbs. Olive oil
sage

grate zucchini with cheese grater
add salt and pepper to zucchini
grate cheese
stir the cheese into the zucchini
beat eggs in a separate bowl and add the remaining ingredients to form a batter
add the egg batter to the zucchini and cheese


Heat a non-pan or grill to medium heat and lightly oil. Pour batter onto hot surface to form desire size pancakes, I make smaller sizes for snakes or appetizer and larger size for main or side dishes.

Zucchini pancakes can be serve alone or with a scoop of tomato sauce. For Breakfast you can serve them with sausages or bacon. If you don't want to serve them with meat try serving with slices of fresh tomatoes or other slice vegetables. I would success Tomato juice as a drink.

Thanks for sharing, and, yes, this has been tried before in different variations. Wonderful stuff!!! Have you ever tried baked zuchinni?

4-6 zuchinni, washed, trimmed and cut into halves or quarters
1/2 cup bread crumbs mixed with 1/2 cup parmesan cheese
3 T butter
1/2 onion, minced
salt and pepper to taste.

Sprinklw the zuchinni with salt and pepper and minced onion. Top with bread crumbs and dot with butter. Cover and bake until tender and golden at 350 degrees. Yum!

it sounds yummy to me. hard to find ways to cook zucchini.
i will try this may self.
