Thank you will suffice...or you can say have a good day or something like that. If you're religious you can also say "God (or whatever deity) Blessings on you, too."

Don't turn it into a hostile religious debate. The person is merely being polite or showing simple courtesy in the best way they know how. It's like folks who ask "how are you?" they don't really want details. The expected answer is "fine"

If you believe in God, you can say "God bless you too.", if not, you can just say thank you; they're only trying to wish you well in the way that means the most to them.

I reply by returning 'God Bless'. It's what I do when my Nan says god bless to me and so far I haven't got a hiding.
