When it comes to cooking skills I would score fairly low. I am trying to get some fish into my diet so I bought a nice slab of salmon yesterday. So I got home and throught to myself 'how the hell do I cook this?'. Does anyone have any good simple recipes? And some advice on what to look for when buying salmon would be great. Also what other fish taste great that you can easily get your hands on at somewhere like a supermarket. I am fairly open to different things and I do like the occasional spicey dish.

The simplest way to cook salmon is to pan fry it or broil it with some lemon pepper spice and fresh lemon juice on top.

1 small hot house cucumber, sliced thin
1/2 fresh red chile, sliced thin
1 handful fresh mint leaves
1/2 cup rice vinegar
1 teaspoon sugar
Sea salt and freshly ground black pepper
1 (6-ounce) salmon fillet, without skin
1 tablespoon sesame seeds
2 tablespoons extra-virgin olive oil


Combine the cucumber, chile, and mint in a mixing bowl. Pour in the vinegar, sprinkle with the sugar, salt, and pepper. Toss everything together so the cucumbers are well coated in the vinegar, the cucumbers will soften and the flavors deepen as it sits.
Preheat the oven to 350 degrees F.

Season both sides of the salmon with a fair amount of salt and pepper. Sprinkle the top of the salmon with the sesame seeds. Place a cast iron or regular ovenproof skillet on the stove over medium heat. Coat the pan with the oil and when it is nice and hot, lay the salmon in the pan, sesame seed-side down. Sear the salmon for 3 minutes, then stick it in the oven and roast for 10 minutes until it's just cooked through. Serve the salmon on a pile of the chile minted cucumbers.

I like to make foil packet and tuck lemon slices and a little butter inside the packet over the fish to keep it from drying out. In the oven at about 375 for about 20 minutes then check to see if its at a "flake" consistency, tiny pieces when you pick at it with a fork is "flakey". I only add extra minutes if I turn the oven off and only another 5-7 minutes, longer and it tends to get that "rubbery" or over cooked texture. Serve it up with the lemon butter from the packet poured over the top. I also add wild rice and steamed asparagus with a balsamic vinaigrette. You can put 1/4 cup balsamic into a bowl and whisk in olive oil slowly until its slightly thick, about 1/4 cup should do it. My hubby thinks I'm a genius and it didn't take much effort so that's a big plus for me!

I like to poach salmon to keep it from getting dry. Put it in a pan to suit the size of the piece. Add water to about halfway up the fish. add some salt and pepper to the fish; a bit of chopped onion on top is nice and you can add a bay leaf to the water if you want. Bring to a simmer and cook about 10 min. Flake a bit of the fish to check the colour; it should all be a light pink, if there is dark pink in the middle, it needs another few minutes.

The simplest way I know is to throw it on the grill. Put some foil under it that you have coated lightly with butter, that way the salmon shouldn't stick. Turn it over as required. Don't leave it too long; it's easy to overcook. I suggest adding salt, pepper, or whatever to your taste after the salmon is cooked.

Put it in foil, preheat the oven to 375 and cook it for 30 minutes or it turns pink and flaky if you poke a fork.

Get some veggies and some salmon filet. with some lemon juice, paprika, pepper and salt.

Make the foil like a pouch to seal the side like a box.

broil it with dill seed lemon juice and thyme sea salt will be flakey when done.
