You've overlooked the "gift" He has given you... Free Will, the major human attribute that shapes our lives, giving us our own self-determined "choices".
But you are right in saying He knows all things, and He knows in advance that and when you will choose, by your own Free Will, to sin. And His hope is that you will choose Redemption of your sin by turning to Him in your darkest hour. When you stumble in life your Father God will pick you up, dust you off, and put you back on the right path, but He cannot do this unless you "choose" to ask Him.
Free Will is necessary so that you can begin building a "relationship" with God, to choose Him and His ways. You are even allowed the opportunity to choose the opposite, all that is against Him... this is when your relationship with Father God becomes "separated". He desires that we choose to love Him, which is why we have Free Will. If He had designed us without Free Will, then the love from us would be pointless adulation from robotic automatons.

God does not control all things. God isn't some giant puppetmaster pulling the strings on every facet of every person's life. God allows us the free will to make choices in our lives, and generally stays out of the way when we make those choices.
I suppose you could say that God is more of a big-picture type, rather than a micro-manager.

Sin is like a butter knife. You can butter your bread with it or you can stab someone with it. God controls the circumstances which directs our paths. A child of God need not worry about sin because by the Spirit our sins are not intentional. He who knows not God sins because they are blinded to the things of God and are foolishness to them. God therefore does not make us sin rather sin is what we do in opposition to God.

I have a theory about that. I think God deliberately created man imperfect. I think he -expected- Adam and Eve to eat the fruit just as soon as his back was turned. I mean, what if they hadn't? There would be no history to speak of, just two people living forever in a garden.
God gives you free will. But free will doesn't really exist if you just do everything you're told, like a robot. We learn from our mistakes (if they don't kill us! 8^) ). So how are we going to learn if we don't make mistakes?
In other words, God wants us to develop judgement. And in the old saying: Judgement comes from experience; experience comes from poor judgement!

God is all powerful, but He chooses to let you have free will, so if you choose to sin, it's your choice, not His.
My husband hates spinach. I know this about him. But I don't make him hate spinach; in fact, I wish he liked it because I do. But my knowledge that he hates spinach doesn't mean I made him do it. It's the same with God. God knows you will choose to sin, but He's not making you do it. A being can have a power He chooses not to use.
The reason God decided to let us have free will is because He wants our love. If we were compelled to "love" Him, it wouldn't mean anything. And the only way it can have meaning is if it's one of two choices we have. So God gives us choices because He loves us, and doesn't want us to be robots.

God gave us something the animals weren't given, He gave us free will which means we get to make choices. Since Adam and Eve chose to eat the apple we have chosen to sin.

No. God gives everyone free will, and he gives you power not to sin; it's up to you to use that power. He probably could stop people from sinning, but he does not force himself upon anyone.

No, He does not control all things. You have freewill. You are free to sin or not. God will deal with you according to how you behaved, after you die. He is not actively involved in this world.

In the beginning God gave the "dominion" of the Earth to men,
Gen 1:26 And God said, Let us make man in our image, after our likeness: and let them have
"dominion"
over the fish of the sea, and over the fowl of the air, and over the cattle, and over all the earth, and over every creeping thing that creepeth upon the earth
