I was planning on making snickerdoodles and gingerbread/oatmeal cookies, but I wanted to make the dough tonight and then bake the cookies on Thursday (so about 2 days). Should I refrigerate the dough or freeze it? I wasn't sure if it would get too dry either way.

What I like to do with this kind of cookie is drop the cookies quite close onto a cookie sheet, freeze them solid (takes about an hour) then pack the frozen cookies into boxes with waxed paper between the layers. To bake them just remove the number you want to bake from the freezer, put them onto a cookie sheet and add about 1 minute to the cooking time. Easy as pie and it lets me have fresh cookies on hand most of the time.

I like to get it out of the tube and roll it into balls. I then put it in plastic wrap and refrigerate it. It is softer and easier to manage that way than if you freeze it.

It will be o.k. in the fridge for 2 days. Just make sure you wrap it good.
