I asked this question last week, and got some wonderful recipes, and I tryed one yesterday, it was fantastic, so i am going to see if I can hit the jackpot again today

I thought this one was sooo easy that I passed it along to a friend who likes Mexican.

Chicken breasts with taco seasoning packets rubbed on then salsa on top.
BAKE (I think 40 mins 325 degrees or something, you'll know).
Then last 3-5 minutes cheese of choice on top (I would do monterey or colby).

I thought this would be great to eat but also use in burritos or tacos. It seems really easy to spice up or down but a very easy, just got home from work, simple and healthy recipe.

This is one of my favorites, it is so easy and even people who don't especially like olives really enjoy it.

Chicken with Olives

500 G/1 lb chicken parts such as legs/thighs
1 large jar green olives (pitted)
1/2 C pine nuts OR 1/2 C diced carrot
2 tbsp olive oil
2 tsp dried sage (powdered or rubbed)
Black pepper
1 C water

If using the pine nuts, first toast them in a heavy bottomed pan over med. heat. Watch them carefully to make sure they don't burn and remove from the pan immediately.

In a large pan, brown the chicken pieces in the olive oil. Add the olives (with the brine), water, pine nuts or carrot, sage and pepper. Simmer over medium heat for 30 mins or until chicken is tender. Check periodically--if it becomes too dry, add more water 1/2 cup at a time.

This is a delicious recipe to pair with brown rice!

Try this one - easy and my family LOVES it!!!

Mexican Chicken Casserole
>
> 4 chicken breasts - boiled and shredded
> 1 cup broth from chicken
> 1 large chopped onion
> 1 chopped green pepper
> 1 can cream of mushroom soup
> 1 can cream of chicken soup
> 1/2 cup butter (1 stick)
> 1 c grated cheese
> 1/2 bag nacho doritos
> chopped jalapenos (to taste)

> saute onion and green pepper in butter
> heat soups - do NOT add water
> add to soups chicken broth, onions and green peppers
> add chicken, chopped jalepenos and 1/2 bag doritos
> mix well (doritos will crunch up some)
> bake in 9X13 greased dish at 350 for 30 min
> top w/shredded cheese and return to oven until cheese melts

CHICKEN PILAU

1 c. chopped onion
2 cloves garlic, crushed
2 tbsp. oil
1 whole chicken breasts (raw), about 10 oz., skinned, boned and cut into cubes
1 c. rice (raw)
1/3 c. raisins
1 tsp. salt
1 tsp. ground ginger
1/4 tsp. black pepper
1 (17 oz.) can apricot halves
2 tbsp. soy sauce
2 tbsp. sherry
Chicken broth

Saute onions and garlic in oil until tender, but not brown. Add chicken and cook 2 minutes longer. Stir in rice, raisins, salt, ginger and pepper. Drain apricot halves and combine syrup with soy sauce and sherry, adding enough broth to make 2 cups. Stir into rice mixture. Bring to boil, stirring once. Then reduce heat, cover and simmer 25 minutes or until rice is tender and liquid is absorbed. Add apricot halves and heat thoroughly. Serves 4.

grill b/sless chick breast.
julienne red and green peppers
cut chicken into strips
in a wanton skin place a couple pieces of chicken, red and green pepper and season with salt/pepper.
deep fry until wanton skin is golden brown
