Hello All! Need some help...

Tomorrow at work we are having our Christmas luncheon. I need to bring some type of "hot dish" but we dont anywhere to keep things warm. SO - I was trying to find some ideas of something I could bring and keep in the crockpot.

I thought of BBQ weenies or meatballs but there is already going to be a lot of meat; so I dont want to go that route. Any ideas?

Thanks!

One of the kickers is that I start work at 5:30AM and we dont eat lunch until 12:00.

Whatever I make has to last that long with out burning. .... I know working those hours always makes luncheons difficult!!

Do a hot dip, like Crabmeat, Artichoke/Spinach, or Broccoli/Cheese.

You could also use your crock pot to make Hot Spiced Apple Cider, and serve out of it like the crock pot is a punch bowl! bring a ladle.

Baked Slow Cooker Chicken

Ingredents-
1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika

Preparation-
Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

You can easily make this the day before and just let it reheat.
Take a bottle of BBQ sauce with you as you may need to add more as it heats up. This is excellent.

For a hot dish, how about some pulled pork. Easy, breezy
Season up a pork shoulder or butt, put in your crock. After about 1-2 hours on high, add in a can of Coke and some brown sugar, let it finish cooking, another 2-3 hours on high or so. Take it out, drain the juice out of the crock, shred the meat or dice it up and put in your food processor (it works great) add your favorite BBQ sauce and mix and heat through. Serve on crusty rolls.

Not a bad substitute for a traditional pumpkin pie that uses the crock pot instead of the oven for convenience and saving time.

2 eggs, beaten
2 tbsp melted butter
1 tbsp pumpkin pie spice
2 tsp vanilla

Combine all incredients and pour into a slow cooker lightly sprayed with no-stick cooking spray. Bake in your slow cooker on low for 6-7 hours. Top with whipped cream if you prefer, when serving.

I would look for some ideas on some websites that have slow cooker recipes. Here's one I found: http://www.slowandsimple.com/

Allrecipes.com is one of my favorites; they have a slow cooker section too. I have a Taste of Home slow cooker cookbook at home that has awesome ideas.. but, I'm at work.

This one sounds really good, lol: http://www.slowandsimple.com/Mexican_Cheese_Dip-r-682.html

Good luck
