Eggs are generally used to give the cake lift as well as to hold the mixture together. If you think about custard, it's liquid when it goes into the oven (milk and eggs). Because the heat activates the cooking process of the eggs, they bind to the milk and make everything thicker and holds together. The same process goes on in the cake. Angelfood cakes have no oil or butter in them (which also adds to lightness) and is basically egg whites and sugar with a little flour. No other leaveners.
But, you can make a cake without eggs. You just have to use a different binder for it. I have taken a box of cake mix (the instructions call for adding oil and eggs to the mix), and instead of adding the oil and eggs - I cook up a package of Cook & Serve Pudding (cornstarch is it's thickener), pour it hot into the cake mix (which activates the baking powder in the mix), put it in a sprayed cake pan and bake it. The cake doesn't rise as much as when you use eggs but it holds together, is moist, and tastes great.
So, to summarize, the eggs give the cake some lift, they hold it together, and make a nice texture. And yes, you can do without them if you replace it with another ingredient that does basically the same thing.

You need the eggs to bind everything together. The only cake I can think of that requires no eggs is angel food cake.

You need the eggs to make everything stick together. The same as you would use eggs with bread crumbs on meat.
Unless perhaps you want to make a peanut butter cake, then you could use some sticky peanut butter.

You have to use eggs, but if you want, you can use 2 egg whites in place of 1 egg - I prefer this - make cake lighter......

and tastier(for people who like eggs)
But mainly its because they make cakes softer...condensed milk can be used instead of them(i think so)
