Are there any baking uses for sour milk?

You can use Sour milk in any recipe that calls for buttermilk like cake, pancakes, waffles, biscuits, etc.

If the milk is unpasteurised you can make Crowdie (a soft Scottish Highland cheese similar to cottage cheese, but smoother).
Just gently heat the milk to blood heat and it should separate into curds and whey, then strain through muslin or a fine sieve. Squeeze out as much liquid as possible then mix the curds with some salt. A little cream can be added if wished.
Delicious spread on oatcakes or girdle(griddle) scones.
It doesn't work with pasteurised milk but it can be used to make the scones. The acidity of the milk gives a better rise to the scones.

Chocolate Cookies
½ cup butter or margarine 4 Tablespoons cocoa
1 cup sugar 1 teaspoon soda (dissolved in sour milk)
2 eggs (separated) 1 teaspoon baking powder
½ cup sour milk (add 1 tsp. vinegar to milk) 1 teaspoon vanilla
2 cups all-purpose flour ¾ cup nuts (optional)
Preheat oven to 350ºF. In large bowl, beat egg whites until stiff. In medium bowl, cream butter, add sugar and slightly beaten egg yolk, then liquid and dry ingredients alternately. Add nuts. Fold into stiffly beaten egg whites. Drop on greased cookie sheet and bake for 10 to 12 minutes. Cool. Frost with fudge or white cream frosting. Makes:
Variation:
Half-Moons: Bake as directed. Frost half white, half fudge frosting.

Ginger Bread Boys (Molasses Cookies)
(“The Cookie Lady”, Hazel Soules)
1 cup sugar ½ teaspoon salt
1 cup molasses 1 cup buttermilk (or sour milk)
1 cup vegetable oil 1 Tablespoon baking soda
1 teaspoon ground cinnamon 6 cups all-purpose flour
1 teaspoon ground ginger
Put sugar, salt, ginger and cinnamon in a large bowl, mix. Add the molasses and stir well. Add the oil and stir. Then stir in 2 or 3 cups flour (whatever you can stir in). Put the soda into the cup of buttermilk and stir; pour into the mixture and mix well. Add the other 3 cups of flour. Sprinkle flour on kneading board and scoop a small amount of dough onto it. Knead more flour into it and then roll out. Preheat oven to 350oF. Cut with cutter dipped in flour and place fairly close together on baking sheets. Bake for 15 minutes or until done. If using a larger cookie cutter, they will take longer to bake. The dough needs to be rolled thick enough to pick up design in cutter. Dough needs to be stiffer (more flour) in order to pick up cookies from kneading board.

Chocolate Streusel Pecan Muffins
(Nestlé)
Topping: 1 cup all-purpose flour
¼ cup all-purpose flour 2 Tablespoons granulated sugar
¼ cup firmly packed brown sugar 2 teaspoons baking powder
½ teaspoon ground cinnamon ½ teaspoon ground cinnamon
2 Tablespoons butter, melted ¾ cup chopped pecans
¼ cup chopped pecans 1 egg, at room temperature
Muffin Batter: 1/3 cup buttermilk or sour milk
1¼ cup milk chocolate chips, divided ½ teaspoon vanilla extract
3 Tablespoons butter
Topping: In bowl, combine flour, brown sugar, cinnamon and melted butter; stir with fork until mixture resembles coarse crumbs. Add pecans; mix well and set aside. Muffin Batter: Preheat oven to 375oF. Grease bottom of twelve 2½-inch muffin-pan cups or line with paper cups. Combine over hot (not boiling) water, ¾ cup chocolate chips and butter. Stir until chips melt and mixture is smooth; set aside. In bowl, combine flour, sugar, baking powder, cinnamon, remaining
½ cup chocolate chips and pecans; make well in center. In bowl, combine egg, buttermilk, vanilla extract and melted morsels; add to flour mixture. Stir until dry ingredients are just moistened. Spoon into prepared muffin cups, filling each 2/3 full. Sprinkle each with Topping. Bake 20 – 25 minutes. Cool. Makes: 12 muffins
Note: to make sour milk, combine 1/3 cup milk and 1 teaspoon vinegar.
