Only the 20GB, 60GB, and the 80GB models will play PS2 games. The 20 and 60 models will play about 98% of the PS2 games, while the 80 will only play like 80% of the PS2 games. Yes, the 40GB model does not play any PS2 games. All PS3 models to play PS1 games.

The 40GB PS3 has no backward compatibility with PS2 games, it will still however, play PS1 games. The 60GB version if you can still find one, has full hardware backward compatibility that will allow the machine to play about 97% of all PS2 games as well as PS1 games. The 80GB version uses software emulation for it's backward compatibility and therefore supports about 75-85% of all PS2 games, it will however play all PS1 games.
The 60 GB version is the best out there, because it has the full hardware compatibility using the same chips used in the PS2, but you may have some trouble finding that one. If you're worried about PS2 games being played on it, then go with the 80GB. -

This question is an often one, so that's my cut & paste answer:
1). 20GB has no chrome trim, no memory card reader and no wi-fi. Not manufactured anymore. Has the best backwards compatibility with PS2 games due to Emotion Engine (PS2's CPU) and Graphics Synthesizer (PS2's GPU) installed.
2). NTSC 60GB has the same backwards compatibility as 20GB version, also has memory card reader and wi-fi. Has a chrome trim.
3). 80GB - extended memory, but reduced backwards compatibility with PS2 games, it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played. Available only in NTSC regions.
4). 40GB - can't play PS2 games at all (all PS2 chips were removed), has 2 USBs instead of 4, no memory card reader, has wi-fi. Avalable in black and white colors. White is on sale only in Japan. Uses 65nm technology (lower power consumption). Improved cooling system. It's the latest version.
5). PAL 60GB - reduced backwards compatibility with PS2 games. it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played.
Wi-fi included in all models, except 20GB.

20gb and 60gb ps3 can play at least 97% of ps2 games, because they are using emotion engine, which means hardware.
80gb ps3 can play at least 72% of ps2 games, because they are using software emulation.
40gb ps3 cannot play ps2 games.
