I had a recipe but i lost. it has been 4 years since i made it for christmas. anyone have the recipe out there, pref. without rice but thats ok too.

This is the recipe given to me by my Great-Aunt who was involved in her Garden Club, Bridge Club, Swedish Club, and Church group. She made this recipe for every group at least once every other year for over 30 years.

BROCCOLI CASSEROLE

Steamed broccoli
Cream of Chicken or Mushroom soup - undiluted
Mayonnaise
Curry
White pepper (to taste)
Shredded cheddar or cojack cheese
Shredded chicken
Bread crumbs
Butter

I didn't give the ingredient quantities because it depends on your casserole dish. If you have a normal round one or square (9" or so), you cover the bottom with a layer of the broccoli - cut into bite sized pieces before steaming. Then you add a layer of the shredded chicken. Then you mix the cream of whatever soup with the mayonnaise, white pepper and curry (for mine I use 1 can of the soup, 1/2 c of the mayo and 1 tsp of curry. If you make a bigger batch, you would just double everything). Spread that over the chicken. Then spread the shredded cheese over all. Sprinkle with bread crumbs and dot with butter. Refrigerate for at least 2 hours to allow the flavors to meld. Bake in 350º oven for 40-45 minutes or until everything is bubbly.

Broccoli Casserole Recipe

2 (10-ounce) packages frozen chopped broccoli, cooked and drained
1 cup mayonnaise
1 cup grated sharp cheddar
1 (10 3/4-ounce) can condensed cream of mushroom soup
2 eggs, lightly beaten
2 cups crushed crackers
2 tablespoons butter, melted

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
In a large mixing bowl, combine broccoli, mayonnaise, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

brocolli casserole

Broccoli, rice, and creamy soups are used to make this great tasting casserole.

Prep time: 20 minutes
Baking time: 1 hour


You Will Need
1 cup water
1/2 teaspoon salt
1 cup instant rice
1/4 cup butter or margarine
1/4 cup chopped onion
1/4 cup chopped celery
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 package (10 ounces) frozen chopped broccoli, thawed
1/2 cup diced process American cheese

What to Do
1. Heat oven to 350°F. Grease a 1-1/2-quart baking dish; set aside

2. Bring water and salt to boil in a saucepan over medium-high heat. Stir in rice; cover and remove from heat. Let stand 5 minutes.

3. Melt butter in a small skillet. Add onion and celery; sauté until tender. Stir into rice. Add soup, broccoli and cheese; stir until combined.

4. Transfer to prepared baking dish. Bake 1 hour.

Serves: 6

INGREDIENTS
2 (10 ounce) packages frozen chopped broccoli
1 (10.75 ounce) can condensed cream of celery soup
1/4 cup chopped onion
1/2 cup sour cream
2 tablespoons all-purpose flour
1 cup herb-seasoned dry bread stuffing mix
1 tablespoon melted butter

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place broccoli in a large saucepan with enough water to cover. Heat over medium-high heat until water begins to boil; remove from heat and drain.
In a large bowl combine broccoli, soup, onion, sour cream and flour. Mix well and transfer to a 2 quart casserole dish. In a small bowl combine stuffing mix and butter; spread over broccoli mixture.
Bake in preheated oven for 30 minutes. Let stand for 5 minutes before cutting.

I like broccoli/cauliflower cheese, but you could use either of them.

BROCCOLI OR CAULIFLOWER AND CHEESE

1 pkg. frozen cauliflower or broccoli, or fresh.
1 can cream of mushroom soup, or some other soup.
1/4 c. grated sharp cheese

Cook the broccoli or cauliflower according to the directions on the package. Place in lightly greased casserole. Pour over mixture of cheese and soup. Bake in 180C (350F) degree oven for 15 minutes or until cheese has melted.

BROCCOLI CAULIFLOWER CARROT CASSEROLE

1 head cauliflower
1 lb. broccoli
1 lb. carrots
1/4 lb. butter
4 slices American cheese
4 slices Swiss cheese
4 oz. frozen peas
8 oz. Mozzarella cheese
1 c. sour cream
Bacon bits

Cut vegetables in small pieces. Spread in 9 x 13 casserole dish. Melt butter and pour over. Mix cheeses and sour cream. Spread over vegetables. Top with bacon bits. Bake at 350 degrees for 1 hour.

Normally i would just say fruit, but i think both. I like the sweet taste of the fruits but i love the tart and kick the greens bring
