Skip the honey in the recipe, and use rose water instead! That way it's less gooey. After the baklava comes out of the oven, pour cold syrup over the hot baklava, or first cool the baklava and then pour over hot syrup! This will produce a better consistency.

Measure the rose water carefully. The worst baklava's I've had taste like soap, which is too much rose water.
