I have some left over spaghetti with home made sauce from scratch that I will put in a baking dish and smother with mozzarella cheese and bake till cheese is melted. will serve with Italian garlic bread from the bakery. Also a mixed greens salad bought in a bag with my home made oil and vinegar dressing.

I'm making Cola Chicken with homemade mac-n-cheese and herbed green beans.

Cola Chicken -
Chicken breasts or tenders
1 can diet coke (preferably with Lime)
1 cup ketchup

Place ketchup and diet coke in frying pan and mix until blended. Lay chicken in pan and cook on stove for about 45 minutes, turning occasionally. The sauce will thicken like BBQ sauce. YUMMY!

Herbed green beans -
Frozen green beans
Parmesan cheese
Dry Italian Seasoning mix
2-3 squirts of Pam

Mix all ingredients in a 13x9 dish. Bake for 30 min on 350. My kids love these!

We're either having tamale pie or Swedish meatballs. I'm leaning toward tamale pie.
