Irish Crème Fudge

I also use other liqueurs in place of the Irish Creme such as Kahlua, bandy, Kirsch, spiced/flavored rum and the new flavors of Kahlua mixing and matching nuts, coconut and dried fruits to match the liqueurs. You can use 2 teaspoons of vanilla extract in place of the liqueur.

3/4 cup of butter
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) or 1 shot Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray

In a heavy 3 quart sauce pan - I prefer an enameled cast iron -melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.

Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.

Pour mixture into pans and cool thoroughly before cutting into squares and serving.

Cream Cheese Mints
"These seem to be everyone's favorite holiday candy recipe. Could be the melt in your mouth texture, or perhaps the sweet peppermint taste. Could also be the fact that this is the easiest candy recipe around! If stored in airtight container, these can be frozen for a couple months. These can also be made into pretty shapes by rolling in granulated sugar, pressing into candy molds, and dropping them out."

INGREDIENTS
1 (3 ounce) package cream cheese, softened
1 tablespoon butter, softened
3 cups confectioners' sugar
2 drops peppermint oil
any color food coloring paste (optional)


DIRECTIONS
In a large bowl, combine cream cheese, butter, and confectioner's sugar. Mix in peppermint oil. Color as desired with food coloring paste, or leave white.
Roll mixture into small balls, and place on waxed paper. Flatten with a fork dipped in confectioners' sugar. Let dry for about 2 hours on waxed paper, then freeze or refrigerate.

Turtles:

1 1/2 cups pecan halves
1 bag vanilla caramels (14 ounces)
5 good quality milk chocolate candy bars (1 1/2 ounces each), broken into sections

On a greased baking sheet, arrange pecans in clusters of 3 halves about 2 inches apart. Top each cluster of pecans with a slightly flattened caramel. Bake at 300F for 6 to 8 minutes, or until caramels soften. Remove to waxed paper. Flatten caramels with a spatula. While caramels are still warm, top each with a section of chocolate. Spread chocolate a bit when it melts. Refrigerate turtles for a few minutes to harden candies.

Bon Bons

3 oz cream cheese
2 1/2 cups powders sugar
1/4 tsp vanilla

Food coloring
Coconut

Mix the first 3 together. You can do it with a fork sometimes, but others you have to use your hands. add coloring of your choice. Let sit in the fridge for around 10 minutes to cool back down. Roll into bite size balls and roll in the coconut! Cover and refrigerate! So yummy! And SO easy!!

ENGLISH TOFFEE BARS

1Tblsp plus 1 ¾ cups butter
(no substitutes), softened, divided
2 cups sugar
1 Tbsp light corn syrup
1 cup chopped pecans
¼ tsp salt
1 pound milk chocolate candy coating

Butter a 15-in.x10 in.x1 in. baking pan with 1 Tbsp butter;set aside. In a heavy 3-qt. saucepan, melt the remaining butter. Add sugar and corn syrup; cook and stir over medium heat until a candy thermometer reads 295 degrees ( soft crack stage). Remove from the heart; stir in pecans and salt. Quickly pour into prepared pan. Let stand for 5 minutes. Using a sharp knife (or pizza cutter) score into squares; cut along scored lines. Let stand at room temperature until cool. Separate into squares, using a sharp knife if necessary. (They are easier to get out of the pan if you take them out when they are almost completely cool.) In a microwave or heavy saucepan, melt candy coating, stirring often. Dip squares, one at a time, in coating. Place on waxed paper until set. Yield: 2 ¼ pounds. Recipe note: We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212 degrees. Adjust your recipe temperature up or down based on your test.

Chocolate covered mini marshmellows,pretzels, peanuts...

Get some Chocolate merkins (melting discs) available at cake/candy supply stores.. Pat Catans and other specialty shops... MELT in a double boiler OR a heat resistant bowl over simmering water....

Get a sheet pan and cover with parchment paper...

put chocolate in bowl(s) and dip mini pretzels in chocolate to coat put on baking sheet and let harden... DITTO with mini marshmellows, peanuts dump spanish peanuts and make little clusters.. VERY easy... nice for gifts....

Chocolate Bark or Almond Bark Candy

Its so easy to make. Melt bark and add anything you like. Spoon on wax paper and allow to set. Then store in tight container. I make a wide varitey candy and its really looks nice on your Christmas platter.

Melt Bark in microwave or double boiler. Keep stirring.
Ideas to add to bark:
crushed peppermint
pecans
mixed nut
salted peanuts
toffee bits
rice krispies
pretzels

After you dip your candy and spoon it out you can take the opposite bark and drizzle it on candy for great flavor and fun look! Enjoy!!!

Almond-Bark Pretzels

Just melt almond bark and dip your pretzels in the melted chocolate.

Buckeyes

4 sticks of softned butter
40 oz. Jif Peanut Butter
2 bags Toll House Chocolate Chips
some parafin wax
Powdered sugar 1 lb plus a bit more

mix butter and peanut butter together, and pwd sugar until you can roll into balls, freeze them on wax paper. Melt some wax in a doulbe broiler and chips until melted dip in peanut butter balls, but not all they way, refreeze, keep in freezer.

Sugar Cookies
Just buy the roll out dough, bake and decorate

Melt chocolate. Crush peppermint candies. Take a pretzel stick and dip it half way into the chocolate. Place it on wax paper. Sprinkle crushed peppermint over the hot chocolate. Let it dry. Great holiday candy!
