I'm still honing my baking skills so don't give me anything too difficult! I'd like to bake some small cakes to have in the house over the Christmas, for guests etc. I want something that will keep for a few days and not dry out. Preferably something chocolatey! Other than that, I have no preference - brownies, buns, pastries, not bothered!!

Well, I'm not one who bakes cakes, but I love baking cookies. Here's an easy recipe for cookies...
1 box cake mix (I've used yellow cake mix and I've used chocolate cake mix)
2 eggs
1/3 c vegetable oil
Preheat oven to 375 degrees
Mix all ingredients together (I have added toffee chips with the yellow mix, and chocolate chips with the chocolate mix, but you can add whatever you want)
Roll into golf ball size balls and place on a cookie sheet (usually 1 dozen per cookie sheet)
Take the bottom of a glass, dip it in flour (just enough to cover the bottom so batter doesn't stick to it), and flatten the balls to about the size of a cookie.
Bake at 375 degrees for approximately 8-9 minutes (depending on if you like them chewy or crunchy)
Take out and place on wax paper to cool

1 box of cake mix will make approximately 2 dozen cookie (depending on if you were eating the batter or not... hehehe)

You can store them for quite some time, if you place them in a seal tight plastic storage container. (I add a piece of bread in to keep them moist and from going stale)

ENJOY!!
