There are certain veggies you can eat raw for breakfast such as tomatoes and cucumbers sliced as well as green or red peppers and onions (if you can bear the tast in the a.m.) with a touch of olive oil to make them even healthier or have them alongside of some cheese and toast bread with a cup of coffee or tea. If you are not into veggies or you cannot imagine having them for breakfast, take the advice already given and make a veggie omlette with tomatoes, peppers, onions, mushrooms and there you have it.

If I can squeeze them in. Throw some onions, bell pepper, broccoli, spinach, mushrooms, etc. in scrambled eggs or a breakfast burrito and it doesn't feel out of place.

I like tomatoes for breakfast - especially on rye toast with salt and pepper. Yum.
