This has to be one of the most commonly asked questions - gryphon is right and gets a thumbs up - do a search.

For ultimate flexibility and ease of editing the colored and B&W areas you should use layers AND layer masks, not the other methods mentioned.

Depending on how precise you need to be this can take a lot of time but it is a valueable thing to learn. Dormouse has a good set of instructions. Once I have used the lasso tool to roughly select my item to be in color I like to follow up by using the quick mask because it gives you a visual of exactly what is selected (the selected area will show up red). Then you can make touch ups using the paintbrush or pencil tool and zoom. I find that easier than working solely with the lasso tool. Have fun with it! Good luck.

Select the area you want to remain in colour using the lassoo tool. (If you want to be very precise you can then click the quickmask button at the bottom of the toolbar and paint a more accurate selection). Go to select -> inverse. This will change the selection to everything that will be in b&w. Then go to select -> feather -> feather it by about 1 px just to make the edge of the seleciton look less hard. Then go to image -> adjustmenst -> desaturate. If you did all that right you should get your desired result =). If the edge is still looking too sharp just go back and increase the amount of pixels you feather by.

the only way i know how to do this is to layer the pictures. put the colored one underneath and the black and white one on top. then erase the black and white one on the areas you want the underneath color to come through
