The answer to this depends on so many things...where are you (city and country), who is your target audience, etc. Asking on a board like this is dangerous because you have no idea if your target audience is answering. The thing that is missing could be the right DJ, the right play list for your DJ, the right lighting, the right marketing, the right set up, the right thing playing on your TVs, the right staffing...lots of options.
Do a customer focus group. This weekend pick 15 of your target customers (your A-listers, the ones who get their other friends to come in). Offer them a gift certificate to come in on a Monday or Tuesday for a few hours to answer your questions (get phone numbers or email addresses to confirm they are coming). Ask them about EVERYTHING. Find out what they like and don't like, where they get their information, what gets them into a new place.
Get your staff excited about and involved in the marketing.
You could also hire a consultant. My husband has been involved in hundreds of bars and clubs over the years and he does consulting now. There are lots of people that do that. Use their expertise.

Good luck.

Here's what I HATE in a bar:

Music so loud you can't hear someone sitting right next to you.

Nowhere to sit.

Furniture that was just added as an after-thought and is shoddy.

In all honesty, I'm not real sure about your product mix. A sports bar with a dance floor and a chef?

Best sports bar I've seen was in my college town of Mt. Pleasant, MI. O'kelly's maybe... forget the name exactly. It had a ton of tv's with a sound box so your table can hear whatever screen you wanted to hear. MOST imprtant though was the fact that you could not go ANYWHERE without having a tv in site, including the bathroom. Don't miss a SECOND on the action. Had some pool and darts too.

save the loos sparkling. Pay a expert cleansing carrier to return in and sparkling them usually. extremely the ladies's bathing room. sell a super decision of beer. not basically Bud easy and Miller Lite. supply a selection of ales and lagers for various tastes. do not play song whilst the super pastime is on mute. all of us hate that. Play the sport over the audio gadget!! sell many categories of Wings. warm, extremely frigin warm, common, outdated bay, jerk , you call it. super wings make a normal activities bar extra desirable than ordinary, and a superb activities bar super! do not hire a dumb distinctly bartender. Have a superb, experienced bartender. hang extremely cool memorabilia everywhere. Signed balls, snap shots, stuff like that. good success inclusive of your bar!

Good selection of drinks. Especially beer. A friendly staff definitely helps. Keep the place safe and clean. The latest trend is NO SMOKING. So that might be a good idea. Especially with food service. Who wants to smell cigarettes while they are eating? Yuk!

Hopefully your state doesn't have all the stupid laws that Utah does when it comes to alcohol.

Good luck!
