You could try figuring out what year it was when they turned 30 years of age. Then make the theme that of the year or decade. Then it could be a surprise to the co-worker when you all say "Oh, I thought you said you were TURNING 30!" Everyone gets a good laugh and the party goes on.

Maybe you could find out things that were popular/in style when the co-worker began working there. However, that's more of a 1970's-themed party, which may not be what your looking for.
