Here is my own recipe for Onion Bhajis, it is one of my favourites -
Onion Bhajis
2 onions sliced fine as possible
1/4 tsp chilli powder
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp turmeric
1 tsp lemon juice
7 tbsps chickpea flour
2 tbsp water
Salt
Oil for deep frying
Separate the onion slices with your fingers and put them in a large bowl. Add all the spices, the lemon juice and a pinch of salt and toss well.
Add the chickpea flour spoon by spoon mixing as you go, then add the water and mix in for a couple of minutes. You should have a claggy sticky mixture.
Deep fry walnut sized dollops of the mixture in medium hot oil until crisp and golden brown ( dont overcrowd the pan - fry them in small batches ). Drain on paper towels and serve.

Ratatouille (it is Indian)
Ingredients
1 lb. eggplant, pared and chopped
1 large zucchini, quartered lengthwise and thinly sliced
2 cups peeled, crushed tomatoes, fresh or canned
1 cup chopped onion
3 Tablespoons granulated garlic
2 cups water
2 Tablespoons vegetable base
6 oz. can tomato paste
2 Tablespoons parsley flakes
1/4 Tablespoon basil leaves
1/4 Tablespoon Oregano Leaves
1/4 teaspoon pepper
Directions
Mix vegetable base with water. Then combine all ingredients in a heavy sauce pot and cover tightly. Simmer over low heat, stirring occasionally, for two hours or more until sauce thickens. This dish may be used as a side dish or an appetizer with pita bread for dipping. Can also be frozen.
