I'm from Texas originally and when my cousin got married in August, her Dad barbecued the equivalent of a side of beef in the form of brisket. There was homemade potato salad, homemade coleslaw, BBQ beans, corn bread, bread and butter, hot dogs, chili, the works.
For dessert, there was ice cream and of course wedding cake.
The meal was served buffet style and there was informal seating.

Ok, what do they like to eat? A wedding reception can be anything a couple wants it to be, as casual as a picnic or BBQ,( high and low end here), or fancier fare. The key is to choose what they want to eat for thier special day. Look at the budget realistically and see where you can cut costs. People make the mistake of assuming you have to have lobster when you can have a great chicken or beef dish as cheaply. You normally have a chicken or beef dish, salad, a vegetable dish, rice or potato dish. But make it what they like. Or have hors d' ouvres that are hefty enough to go through the dinner hour, like sliced fillet mignon, serve with crudites, good cheeses, quiches, pate, fruit, wedding cake for dessert. Good rule of thumb, you get 5 glasses of champagne from a 750 size bottle, so multiply that by how many people you know will actually drink it. Don't waste money on liquor people won't drink. If you need to cut costs, have a cash bar, or serve only champagne, coffee and tea, soda, ect. Bit of advice too? Have them get a cake from a baker that is not high end. Wedding cakes don't have to cost in the hundreds of dollars or thousands. You can get a great cake that serves up to 250 for under 150 dollars. Really. August food, anything goes. Just keep it fresh, light, festive, and fun.

August Wedding are hot and humid. One suggestion please make to her is in regard to her wedding cake. If at all possible DO NOT use tiers/columns. Used stacked. I say this having done 100's of weddings, tiers/columns is hot weather at any outdoor reception area is tricky at best. If indoors transport of the cake is crucial. I have seen many a bride in tears, because they ignored this advice.
The wedding foods all depend on the caterer or family is making and the venue for the event, outside -inside formal -non formal, Buffet or sitdown. I would suggest looking at resort sites and looking at menu's available with pricing for ideas.

You can only serve cheeseburgers and fries at weddings on August 31. That is a solid rule. If you want to serve something else, she's going to have to change the date.

Well, that would depend on the venue, the preferences and ethnicity of the bride and groom, and their budget.
My cousin had a really beautiful baby spinach/jicama salad; grilled chicken breast with a kind of mango salsa stuff; a rice with herbs in it; and grilled corn.
As a veggie, I got salad, the sides, and a creamy pastry boat filled with really fresh veggies like broccoli, cauliflower and peppers.
Dessert was a lime sorbet next to a chocolatey pot de creme.
Honestly, if the food is good and free, nobody's going to ***** that it's not 'seasonal' enough. :-)

Is the reception indoors or outdoors? I have been to warm weather weddings where anything is served, hot or cold.
