Vegetarian is a blanket term. It covers the 5 levels. There's none of this "pollo pesce semi" crap. Five. That's it.

NO vegetarians eat meat. Fish and chicken are meat.

Lacto vegetarians - milk, no eggs.

Ovo vegetarians - eggs, no milk.

Lacto-ovo vegetarians - eggs and milk

Strict vegetarians - strictly plant based diet. Some call it a vegan DIET (which is NOT the same as being vegan) No animal products. No dairy, no eggs, no honey, nothing animal-derived.

Vegans - plant-based diet (as above). Vegan implies moral concern for animals and extends to lifestyles as well. We avoid animal products in our consumables such as shampoo, make up, cleaning products, and so on. No leather, wool, suede, silk, and so on, and avoid animal testing.

A vegetarian avoids the flesh of ALL animals--and this means fish!!! Vegetarians also avoid gelatin (the rendered hooves, bones, tendons, and hides of animals) and rennet (the fourth stomach of veal calves used to coagulate cheese) and possibly other animal ingredients. Vegetarian is primarily a diet.

Vegans avoid the same things vegetarians do, but they also avoid dairy, eggs, and honey. They do not wear silk, wool, leather, and fur. They also avoid animal ingredients in toiletries and cosmetics. They do not go to circuses, zoos, or places where animals are exploited. Veganism is a lifestyle based on avoiding products resulting from animal exploitation.

"Vegetarian" usually is short for "lacto-ovo vegetarian" which means someone who eats no meat (vegetarian) but DOES eat dairy (lacto) and eggs (ovo)..this is the biggest group of "vegetarians" I just wanted to emphasize the connection there.. you allready have other answers listing the other categories (ovo-veg.. lacto-veg) I just wanted to emphasize that when someone calls themself "vegetarian" they usually mean "lacto-ovo"

Vegans eat or use NO animal products (milk, eggs, honey, leather, wool, etc...) It's more of a lifestyle than a diet.. Vegetarianism is USUALLY just a diet.

ALL Vegetarians normally avoid what we call "slaughter by-products" which are things that aren't the meat (flesh) of an animal, but the animal still had to die.. These include "gelatin" (made from pig's hooves), "lard" (pig fat) etc etc etc..

NO vegetarian eats fish, chicken or any other dead animal.. They may CALL themselves vegetarian and eat that, but they are mistaken, misinformed, moronic, and spreading confusion amongst the population

There are lots of different hats that vegetarians wear.

Vegans would probably be the strictest, they won't eat anything that has animals in it or animal by-products... no eggs, no dairy, no meat, no honey.

Vegetarians, as I said, come in many varieties:
Ovo-vegetarians - Will eat eggs
Lacto-ovo vegetarians - will eat eggs and dairy
pesco-ovo-lacto-vegetarians - will eat fish, eggs, dairy
pesco-pollo-ovo-lacto-vegetarians - eat fish, eggs, dairy, chicken
Flexitarian-Vegetarians-will eat eggs, dairy and even meat but make a great majority of their diet vegan
And so on and so forth.

There's a lot of squabble about what really defines a vegetarian and how much animal and animal byproducts you can eat and still define yourself as a vegetarian... honestly, it's not worth it to argue. It seems that everyone is convinced their way is the right way and are very empassioned to say so. One's diet is a personal choice.

EDIT: Apparently humor doesn't really come across well online.

I have never heard about these variations "pesco-ovo-lacto-vegetarians, pesco-pollo-ovo-lacto-vegetarians
Flexitarian-Vegetarians" To me a vegetarian is someone who doesn't eat meat of any kind. Otherwise they would be just like anybody else.
