Well, I sincerely hope you don't go back to chicken and tuna, but I'm glad you're doing the 30-day vegetarian thing.
Anyway, there is a fantastic website called www.vegweb.com, and they have lots and lots of vegan recipes. www.recipezaar.com also has a pretty good vegan section.
You can also go to www.cok.net and get a tiny booklet of easy vegan recipes. Their starter guide also has a few recipes.
And check out "The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson. It has lots of hearty recipes (including a fantastic seitan pot roast) for the budding vegetarian (or even longer-term veg*ans).

In a large saucepan bring to a boil 3 c vegetable broth and 2 c V8 juice.
When it boils add 1/2 onion, chopped, 2 cloves garlic, chopped, 2 c brown rice, 2 tsp dried oregano or thyme.
Simmer until rice is tender and liquid is almost absorbed.
Remove from heat. Add 1 can of black beans, drained, 1 can of corn, drained, 1 can of green beans, drained, and 1 can of diced tomatoes, partially drained.
Stir in, cover and let sit for 10 minutes.
Serve as is or with shredded cheese if desired.
You can vary this lots of ways - choose different vegetables, cook fresh vegetables in with the rice, use lentils or mung dhal instead of black beans, use taco seasoning or Italian seasoning instead of herbs, etc. I love it with fresh zucchini and carrots cooked with the rice too.

First off good for you! Depending on how much you like to cook you can get very creative. I like to go to foodtv.com and just search around. You can always omit the meat since your not trying to be vegan.
If you want to go vegan just search "vegan recipies" on the internet...there are tons, even cupcakes!

There are quite a few websites found by Googling "Flexitarian Diets" that have excellent recipes . . . as well as recipes that would include chicken, tuna and other fish/seafood.
Be careful for the 30days since you have excluded a wonderful source of Omega-3 and protein from your diet. . . i.e. tuna.
