Woah...!
i like kimchi but not THAT much! and i'm korean....
I'm a boring person, the only weird way i've eaten kimchi is straight from the jar or with seaweed (who knows why?)
My favourite way of eating Kimchi is just with rice wrapped in seaweed.Although eating it with ramen isalso very tasty.
I prefer the turnip kinds of kimchi, where it's like a block, instead of the cabbage like stuff. And well, I eat kimchi everyday.
I hope i helped, but i know that it's probably not what you expected...

Yes I do. Its one of a side dish vegetable that I always have whenever I order a Korean plate lunch or dinner plate to go. I remember when I was a teen I sometimes use it as quick snack coming home from school I would open a jar & put the kimchi over hot rice. Fast & easy.

Annyong ha shimnikka! I love Kimchi. I labored with Koreans for two years. At first I didn't like due to the fact it was once too highly spiced. But the scent drove me to check out and now I adore it. Actually Korean meals is facet of our lives now.

I'm Korean so of course I love kimchi. My favorite is horseradish or turnip kimchi. I also love cucumber kimchi. Cabbage kimchi is good too but for me it must be sour and crunchy. Can't really think of any odd ways that I have eaten it. My family eats it with everything. American foods and Korean foods.
Now I am hungry...

I love my kimch'i as sidedishes; accompaniments to a plain rice meal with other Chinese dishes and of course when dining in Korean restaurants. This is the best way for me (go with white rice) because kimch'i is basically a salted, pickled vegetable dish to enjoy on its own without diffusing or diluting the original taste of the pickled. Boil plain rice perfectly complements kimch'i.
The hot and spicy taste of kimch'i has a unique flavour and stimulates one's appetite. It is also a nutritious, providing vitamins, lactic acid, and minerals. Kimch'i can also be preserved for a long time so that makes it very handy - a must-have item in the refrigerator.
I usually have the classic Whole Cabbage Kimch'i (T'ongbaech'u Kimch'i); and Hot Radish Kimch'i (Kkaktugi). Oops there goes my saliva onto the keyboard.....

I LOVE kimchi! I'm Korean! I love every kind of kimchi, I don't care what it's made with, although I do like kimchi made with leafy greens the best. =)
I like it with rice, I love kimchi soup (kimchi chee ge), eggs!, ramen, Korean soups of all kinds, by itself, fried with rice and other veggies and rice (yum!), with most Korean dishes, etc.

I'm the whitest of the white but I can eat that stuff with a fork right from the container...
I use to make it as well but I lost the recipe-
now I'm getting addicted to curtido and latin food. (it's like a salvadorean kimchi but not fermented)
