Yes, it's edible. It's just the outer peel or layer of the actual coconut and contains fiber.

yes of course you can, heres an idea for your coconut...

GRATE IT, mix with some sugar, 1 egg white and touch of cinnamon
place in a heavy pot and cook over high flame, always stirring till coconut turns a golden brown, place on a plate and let cool...

makes a killer snack, or topping for pancakes, ice cream whatever
