I eat both hard and soft tacos - it just depends on my mood.
If I'm eating soft tacos, I like to use black beans for the main ingredient in the filling. I warm it up and usually add some onions, jalapeno peppers and tomatoes. Every now and then I'll add some brown rice with Sofrito. Sometimes I'll saute onions and peppers for a "fajita" type taste.
Another favorite alternative is the ground beef crumbles by Morning Star Farms. It's tasty when I add taco sauce or salsa to it directly and then put my favorite toppings on.
For hard tacos, I use the Morning Star Farms crumbles or some LifeLight chicken strips. I then add my faves: onions, tomatoes, peppers, etc.

I just like them with lots of veggies. Lettuce, black beans, plain yogurt, olives and salsa!
